Salmon at Tavern on the Green

A classic is back on track

Last night the red carpet, black tie attire and celebrities made it all official: Tavern on the Green is back! Though it opened for a few weeks now, last night’s gala celebrated — and sealed — the grand debut of NYC’s most anticipated restaurant comeback of 2014.

Tavern’s reboot includes a spacious bar room; a sleek glass cube replacing the famed Crystal Room; and the cuisine of executive chef Katy Sparks. Her salmon ($29) in particular makes this Tavern rise way above a tourist attraction and event venue. A lovely coral-colored filet is seared to a perfect medium-rare a la plancha. Its mild and creamy flavor is complemented with a sweet-and-earthy cumin-roasted carrot puree; a remarkably restrained horseradish crème fraiche; and a side of simply sautéed greens. A few bites in, and all lingering food memories of the old Tavern disappear.

Here’s even more dish from last night: Tavern’s new owner Jim Caiola donned a symbolic green jacket with his tux; the garden featured a grand piano and swinging live music; and celebs in attendance included Fran Drescher, Regis Philbin, Martha Stewart and Mario Cantone. If the evening’s ebullient energy was any indication, this new Tavern will enjoy a long, long run.
